Island Summer

Summer is almost over on our beautiful island. The teachers have been posted, the streets are calming and our slow-moving island life returns. This summer some of our staff explored other beautiful locales that we will discuss and also, we want to share with you our favorite summer recipes!

We are all very family oriented here at Dental Care of Vashon. Much like winter, many of our staff here has gone to visit family this summer season. This summer our hygienist Wanda went with her husband and two beautiful daughters to Glacier National Park to camp and adventure with her brother-in-law and his family. On their trip they went ziplining, water rafting and did some rock climbing. Wanda was so nice to send us a picture of one of the many beautiful views she got to see. The picture to the right is of Whitefish Montana. While other members of our staff went to California, Las Vegas and Ocean Shores. We all had such amazing times going to see friends and family.

Now let’s talk food! With this nice weather comes barbeques. Kayla our office manager has two recipes that she thinks are absolutely amazing. Here is the first:

SPINACH AND ARTICHOKE DIP

Ingredients:

  • 8oz package of cream cheese, cut in to chunks
  • ¼ cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup Sour cream
  • 14oz can artichoke hearts, drained and chopped
  • 10oz package frozen spinach, thawed (I use raw)
  • 1 Tablespoon minced garlic (or more if you love garlic like me)
  • Salt and Pepper for taste

Directions:
1.Spray or oil your crockpot to help prevent sticking.
2.Put all ingredients into a crockpot and cook on Low for 2 to 3 hours, or until creamy and hot. (Stirring occasionally)
3.Serve with any chip, cracker or veggie. (I use sliced baguette)

WATERMELON, MINT & FETA SALAD

Ingredients:

  • However, much Watermelon you want to use
  • Feta
  • Mint
  • Balsamic Glaze

Directions:
1.Cut watermelon into bite size cubes (as much as you want)
2.Loosely chop mint (as much as you want)
3.Sprinkle Feta (as much as you want)
4.Drizzle balsamic glaze on the top (as much as you want)

Now that you have a hot and cold side dish you should be set for any summer barbeque!
